Firstly, an egg with a soft shell is more difficult to pass than one with a perfect shape. Why? Because in order to push it out, the muscles in the chicken's reproductive tract need something to hold onto. Secondly, chickens that are overly pressured to lay (i.e., spurred by extra lighting throughout the winter) eventually develop weaker muscles. What then was Ester's problem? We don't light our coop, but given that she is four years old, I'm guessing that either a soft-shelled egg misfired, which I haven't been able to find, or she is simply getting older and found it challenging to get one out.

This is how to make British flapjacks, which aren't pancakes at all! Made with oats and golden syrup, flapjacks are a type of British "biscuit" that resembles granola bars. They are chewy, light, and generally healthy. There are three different ways to cook the flapjacks in this recipe: the conventional oven approach, the Instant Pot method, and the no-bake alternative. Regardless of where you live on the other side of the pond, we hope you like this British flapjack recipe!
